Le tournesol est la plante de biomasse numéro 1 pour démarrer un nouveau système syntropique. C’est avec le maïs l’un des deux piliers du potager syntropique adapté au climat tempéré, popularisé en France par la pépiniériste Anaëlle Théry.

Sa racine pivotante puissante, qui peut s’enfoncer jusqu’à 3 mètres de profondeur, décompacte et structure le sol tout en le drainant. En surface, ses grandes feuilles créent rapidement de l’ombrage, limitent l’évaporation et protègent les cultures basses et moyennes.

En syntropie, on le sème très dense : là où vous voudriez 10 plants, semez-en 50 à 100 ! On taille progressivement les plants les plus faibles, qu’on dépose directement au sol. Cette biomasse fraîche, riche en carbone, nourrit les micro-organismes du sol et signale aux plantes voisines qu’il faut pousser.

Après la floraison et la formation des graines, les tiges ligneuses — que certains appellent le « bois du pauvre » — constituent un paillis durable et épais, parfait pour couvrir le sol en hiver.

Si vous souhaitez les consommer, ou en récupérer pour vos semis de l’année suivante, vous pouvez récolter les graines à partir de Septembre, une fois que la fleur a séchée.

Les graines mûres, récoltées en septembre-octobre, sont comestibles et très nutritives : riches en acides gras insaturés, en vitamine E et en protéines. On peut les consommer grillées à la poêle avec un peu de sel, les ajouter dans les salades, les pains ou les granolas.

Les jeunes pousses (microgreens de 10-15 cm) sont également délicieuses crues en salade, avec un goût de noisette douce.

Et les fleurs sont mellifères et très appréciées des abeilles en plein été, quand les autres ressources se raréfient !
